A spoonful a day is all it takes — straight off the spoon, or stirred into warm (never boiling) water, since heat much above 40°C undoes the living goodness raw honey is prized for. It's lovely over toast or yoghurt, swirled into tea once it's cooled a little, or with a squeeze of lemon in warm water first thing. One honest note: raw honey isn't for babies under one year old.

Two small habits keep it that way: use a dry spoon, and keep the lid on. Water is the one thing that can let honey ferment over time. No need for the fridge — that only hurries along the crystallising. And if it does set, a warm-water bath softens it again.

But there's one firm rule, and it's true of every honey, ours included: never give honey to a baby under 12 months old. Raw honey can carry natural spores that a young infant's gut isn't ready for, and heating doesn't remove them. It isn't a flaw in the honey — it's simply how honey and tiny tummies work.
